Paleo Muffins

Healthy Muffins That Taste Like Cake!

2 cups almond flour
2 tsps baking soda
1 tsp sea salt
1Tbs cinnamon
1 cup pitted dates
¾ cup walnuts
1 tsp apple cider vinegar
¼ cup coconut oil
½ cup shredded carrots

Preheat oven to 350 degrees.  In a large bowl, combine almond flour, baking soda, salt, and cinnamon.  In a food processor, combine dates, bananas, eggs, vinegar, and coconut oil.  Add mixture from food processor to dry mixture in the large bowl and mix thoroughly.  Fold in carrots and nuts.  Spoon mixture into paper lined muffins tins or coat tins with coconut oil.  Bake at 350 for 25 minutes.

*If you don’t own a food processor, just rip the dates apart by hand.  It’s a little time consuming, but works just as well to do that then mix wet ingredients with a hand mixer.
