Teriyaki Fried Vegetables and Eggs

 Most of the Girlish Writers including myself listed "Eating Healthier" as one of our new years resolutions; so lately this summer I've been playing around in the kitchen seeing what I could come up with. I really wanted to create a dish that not only was very healthy and consisted of mostly vegetables, but was also flavorful and filling.  As a result, I came up with an easy  meal that made eating healthy very satisfying.
Teriyaki Fried Vegetables and Eggs
  • 2-3 tbs. of olive oil
  • 1 c. of chopped onions
  • 1 c. of chopped broccoli
  • 1 c. of chopped red bell peppers
  • 1/2 c. of jalapeno peppers
  • 1-2 eggs
(Optional) If you want even more flavor, towards the end of the steps add:
  • 1/2 cup of crumbled bluecheese
  • 1 tbs. of horse radish cream sauce
Instructions Heat oil in a saute pan over medium heat. Once hot, add both peppers, onions, broccoli, and spinach and cook until all vegetables are golden brown (7-10 minutes) *note: the pictures are only for 1 serving whereas the instructions are for 2

Add teriyaki sauce and stir until the vegetables are equally covered in sauce


 After sauteing vegetables in the teriyaki for a little bit, crack an egg or two over it. Based on the temperature, the eggs should cook relatively fast.

 Before the egg fully cooks scramble and toss with the vegetables.  Once eggs are cooked and are evenly spread throughout the dish turn stove off.


 After you've let it cool down, serve with a fork and a plate, and enjoy!

*It's also really good to put over rice!
